1 cup cream 35%
1 1/2 cup brown sugar
1 1/2 cup sugar
1 tsp vanilla
1 tbsp butter
Boil cream, brown sugar & sugar until mixture forms a soft ball when dropped into cold water.
Remove from heat and cool slightly for about 30 min.
Add 1 Tbsp butter, a pinch of salt and 1 tsp vanilla then beat until smooth and creamy, and mixture starts to thicken up.
Butter a pie plate. Pour mix & let it firm up. Cut into squares.

J'ai déjà fait ce sucre à la crème et pourtant avec du sucre brun, il est supposément devenir couleur caramel et le tien est pratiquement blanc!!

Hélène, thank you for that lovely recipe. I've tried so many times to make a perfect fudge - my Mom can - and just recently I bought this kind of fudge from a Farmer's Market.

I tried to make Sucre a la creme and it turned to caramel... what's your secret?
I used vanilla, someone said not to b/c it has alcohol and that will turn it to caramel???
